The Hamen Hat Cookies

Yesterday one of our church family members blessed us by making these cool Hamen Hat Cookies

I called her at the last minute and asked her to make them because they went with the Bible lesson we were teaching. The Story of Esther.

At that moment she had a choice. She could have easily said she did not have time. Or that I should have asked earlier (which I knew I should have) or simply said no.
BUT
Not her.

She smiled and said sure she would make them. I apologized for asking her at the last minute, but I had just discovered the recipe that day and the significance those cookies brought to The Story of Esther.

Because of her kindness she blessed our whole congregation. And I was able to share the story in a way that many would remember.

Because she didn’t say no all the children have a deeper understanding of the bad guy (Hamen) in The Story of Esther. And how God protected Esther and her people from Hamen’s evil plot against them.

The coolest thing is that she isn’t the only one. Many people in our church look for ways to be a blessing. One lady invites everyone she knows to church she is happy to encourage people to attend. She has told me that she thinks it is good for people to attend. She says when she attends church she feels better. It’s like the positive start she needs to begin her week. She is a role model to me and to others.

Another lady and gentleman has opened up their homes to us so that we can have Bible Study. They have young children and their schedules are very occupied BUT they make room for what is important to them. I admire them for that.

One gentleman breaks down the hospitality table most Sundays. And when he doesn’t get a chance to there is a young lady in our church that makes it her mission to clean that area. She has dine this since the very start of Safe Haven Church. They both do this without anyone asking.

Other young men arrive early to church every week to set up. They make sure the sound is working, the videos we use for sermons are working. And that everything is in its place. They are setting up drum kits, and tables, chairs, and their guitar. They all amaze me with their devotion to God.

Another couple took on the entire responsibility of the games we play during a Family Fun Night. They were so creative they had the kids doing all kinds of cool games using water, sponges, and pipes with holes in them. Since it was warmer and the event was outside it was a huge hit!

I could go on and on and on about all the different church family members and how they bless us so much with the little things they do. It may seem like no big deal to them, but to Scott and I it is a HUGE deal. They take so much off of us by taking ownership in their church and looking for ways to bless others. They realize that it’s not about them it’s about others. They greet each other warmly, they catch up on their week. They encourage one another and they are true friends to one another. It is my privilege to be a very small part of each of their lives. It is so easy to love our church family.

That’s another reason I wanted the Haman Hat Cookies made. I believe they all deserve the best. So whenever I find something that can add positive value to what we are teaching we use it to help us all remember the important values of what is taught.

Have you ever heard the saying that goes something like, “I’d eat my hat if this or that happened” well that’s the gist of eating a Hamen’s Hat Cookie.

The Story of Esther is remarkable. And very eye opening as it is yet another example of God’s protection, love, and saving grace.

What we do in our everyday life can affect others more than we realize. Each day we are faced with a series of choices. Just like Esther was faced with a choice to go before the King uninvited. Knowing full well it may cost her life. We are faced with choices that could change our lives. Some choices are easily decided just like making the Hamen Cookies. Other choices we make may take more thought.

Whatever choices you may be facing today please know that there is a loving savior who will help you in life all you need to do is ask. 1 John 5:14-15

There is so much more to The Story of Esther. I encourage you to read the entire book of Esther found in the Old Testament of The Bible. Here is a link to a brief explanation of The Story of Esther.

Easy Hamantaschen (Haman Hats)

“A favorite treat for the Purim holiday! It has always worked better for me if I cover the dough and refrigerate overnight.”

Servings
Original Recipe Yield 24 cookies

Ingredients
3 eggs
1 cup granulated sugar
3/4 cup vegetable oil
2 1/2 teaspoons vanilla extract
1/2 cup orange juice
5 1/2 cups all-purpose flour
1 tablespoon baking powder
1 cup fruit preserves, any flavor

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, beat the eggs and sugar until lightly and fluffy. Stir in the oil, vanilla and orange juice. Combine the flour and baking powder; stir into the batter to form a stiff dough. If dough is not stiff enough to roll out, stir in more flour. On a lightly floured surface, roll dough out to 1/4 inch in thickness. Cut into circles using a cookie cutter or the rim or a drinking glass. Place cookies 2 inches apart onto the prepared cookie sheets. Spoon about 2 teaspoons of preserves into the center of each one. Pinch the edges to form three corners.
Bake for 12 to 15 minutes in the preheated oven, or until lightly browned. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.

Roasted Brussels Sprouts Salad

What do you do when you run out of lettuce but want a salad? You get creative.

I opened up the fridge and found a bag of shaved Brussels Sprouts, I found them in the refrigerated section of Wegmans I decided to try a roasted salad.

Using my 4 quart Xtrema oblong baker I placed the raw shaved Brussels Sprouts into the baking dish. I sprayed a little cooking spray and sprinkled this on top.

Toss the Brussels Sprouts to make sure each one is coated evenly with seasoning. You can substitute any seasoning you like I imagine Dill would be nice to try. Here’s what it looked like before it went into the oven.

I set the oven to 400 degrees and placed the Brussels Sprouts into the oven. Please check them every 5 minutes because they brown fast and you don’t want burnt Brussels Sprouts do you?
After about 12 to 15 minutes this is what it looks like.

This is a very easy side dish and since the shaved Brussels Sprouts were purchased ready to use all I had to do was cut open the bag and pour the Brussels out into my Xtrema oblong baker!
However I did not want to just leave these beautiful Brussels Sprouts as a side dish. I felt they needed to be dressed up for a salad. I added pink grapefruit, and a handful of crushed pecans. It was so different because the salad was warm from the Brussels Sprouts yet some bites were cool to taste because of the cold grapefruit. Here is the finished dish:

Buttermilk French Toast

Hello Dear Readers,

This morning I decided to treat my sweet mother to Buttermilk French Toast. We have a combined household and without her Scott and I would not be able to do all that we do in ministry and our church www.safehavenchurch.info

Here is what you need to make your own Buttermilk French Toast.
2 Sliced of bread I used Challah, you can find Challah bread on Fridays at Wegmans
1 Egg (wisked)
4 tablespoons or a good splash of Buttermilk.
2 tablespoons of very good Vanilla extract I like the Madagascar Vanilla.
A sprinkle of Cinnamon and Sugar
A pinch of salt I use sea salt

Directions:
Cut Challah sliced to desired thickness, set aside.
In a small bowl crack, and wisk 1 egg until nice and yellow. Then add Buttermilk. Next add Cinnamon and Sugar, wisk well. Then add Vanilla and wisk. Add the pinch of salt and wisk.

Place your challah bread in a pie dish or a plate with raised edges.

Some people soak their French toast. I prefer to spoon the egg mixture over each slice of bread one side at a time. I personally prefer a less custard type French toast. I do not finish the French toast in the oven.

Set stovetop to medium heat. Today I used my 6.5 Open Skillet from Xtrema! I prepared the skillet by spraying cooking spray into the skillet then adding a small pat of butter. When the butter melts you are ready to place your buttermilk challah bread 1 slice at a time, into the skillet to make your French toast. You will need to spray and butter your skillet for each slice of challah bread.

Cook each side until golden brown. Plate, serve with grapes, whip cream, and a small amount of Agave nectar, and enjoy!

The GREEN Grilled Cheese Sandwich

Dear Dear Readers,

Do you ever find yourself standing in the kitchen saying I want something different to eat?

Let me introduce you to this:

BEHOLD! The GREEN Grilled Cheese Sandwich!

It is SUPER easy to make and your getting some veggies in your diet ;-)

Start with your frying pan I used my Xtrema 10 inch skillet.
Set stove top to medium heat. Let the pan warm up while you gather 2 slices of bread, 1 or 2 slices of your favorite cheese, and a handful of steamed broccoli (or another favorite green veggie), cooking oil (I use Extra Virgin Coconut Oil), 2 pats of Butter.

Once your pan reaches the desired temperature place a small amount of cooking oil in pan. If it melts super super fast turn down your heat dial. The yummiest grilled cheese is worth the wait because you want golden bread not burned. Once you have the pan at the right temperature place a very small pat of butter into the pan, move the warm, melted butter around the pan to coat bottom completely. Then place both slices of bread into the pan. Observe well, do not leave your cooking project, if you do your sandwich bread will burn. When the bread is just about golden brown place cheese on top of each slice if you choose 2 slices of cheese. If not, lace cheese on one slice of bread. You are only browning one side of the bread. Next add your green veggie to one slice then bring the slices together to make your sandwich. Press down a little with your spatula to make sure the cheese melts into the veggies and enjoy!

Is it Spring Yet?

Around my house, we are officially bored. February is a tough month. We are a household that thrives on being outside. My kids can run wild and freely expend all their energy by just being kids. In my opinion, there is not much fresh air and sunshine can’t cure. Factor the unpredictable weather of February with my lack of real crafting skills and I am running out of ideas and ways to occupy my sons and generally keep them away from zombie face in front of the television. There are only so many play dates, puzzles, games of Candyland and playdoh we can all handle before I realize we need a special occasion, something to shake our boring winter routine.

Therein lies the beauty of Valentine’s Day.. It often gets abuse for being a “Hallmark Holiday”, but it’s a great day to celebrate! Since it can fall on any random day of the week, it was always a treat to take time out of our busy schedules to do something celebratory, frivolous and fun together. We will have a wonderful Valentine’s Day dinner party including sparkling cider in special heart cups and chocolate fondue for dessert.   Unlike many of you creative and crafty mamas, I not only require inspiration for a Valentine’s Day Celebration but step by step instructions for my homemade decorations. Fortunately, there is a wealth of fun, helpful and inspiring spots online to peruse based on your own family’s particular tastes. Pinterest.com is so popular right now but beware! Cheese Steak Roll

The other evening I made this

It was easy!

I used my Xtrema oblong bakeware click here

We purchased the seamless crescent dough, then after cooking the steak we placed it on top of the rolled out dough. Next we cut 7 slits on each side of the dough and added cheese on top of the steak. We layered the strips of dough one over the other to enclose the steak and cheese. Making a braid design without braiding all you are really doing is making X’s with the strips.

Then we baked the dough according to package directions.

It was fast. This is a once in a while treat. Hope you like it too.

2012 Catching Up

 

Happy New Year Dear Readers,

I hope your Holiday season and New Year’s Celebrations were wonderful! We have had a very occupied last 2 months. It was joyous, it was fun, and it was anything but dull!

Our Family Christmas Picture 2012

This is our family Christmas picture (unless I can get everyone dressed up for a photo shoot before February). We had made an appointment with a photographer 2 times and both times one of our children became sick. So the month of December and the beginning of January was spent taking good care of the kids as they passed their germs back and forth. We are over it now, THANK GOD! And it seems as though the “normal” has returned to our humble abode.

Our Son had his 9th birthday. N I N E. Next year will be his first double digit birthday. Where did the time go? Do you ever feel the same way? This year of all things, Seth decided he wanted to ride Go Karts for his birthday. GO KARTS! in January. Brrrrrrr. So we asked a few of his friends to brave the chill and ride Go Karts with him to celebrate. They were all great sports and it seems as though everyone enjoyed themselves. It was a good day and the weather was mild. Prayers answered, thank you Lord.

Scott’s birthday is near the end of this month, and he wants me to go to the shooting range with him. Everyone that knows me knows this is a huge deal for me, I have not touched a gun, let alone fire the thing. Maybe if it’s pink I can do it, I don’t know. What I do know is that Scott does not ask for anything, he is a wonderful husband, and fantastic father to our children, and I feel like since he has asked for something “finally” on his birthday I feel like I must oblige him. (Deep deep breath) truth be told I am nervous. I know it’s silly, but I can’t help myself. I am more comfortable with a pair of crafting scissors and a great light pink lipstick in my holster than a magnum 3000 special whatever kind of gun. So, I’ll keep you all posted on this one, because if I do go to the shooting range you better believe I’ll be taking pictures. Charlie’s Angels look out. Heaven help us all!

Isn’t she a beauty? I have been waiting for her to be created since last year when I found out that Xtrema was going to create a soup pot. I love making Vegetable soup and I can only dream of how awesome it would be to make it in this lovely, pretty, crock. I will have it, it’s just a matter of time. We were destined to be together. You all know how much I love my Xtrema cookware. I use it every single day, and I am not disappointed. Today I made grilled cheese sandwiches and they were perfect. I can’t remember the last time I set the fire alarm off. (Don’t laugh it’s true) before I started cooking with Xtrema it was normal to hear the loud piercing beep of the fire alarm, because I would cook on the wrong temperature and smoke the whole house. We could barely see each other from the kitchen to the living room. Now things are different, and for me it’s because of this awesome company thank you Xtrema. And just so you know, I do not get paid a nice fat check to share this with you.

One more thing, that I have been working on for you all in my spare time (hardy laugh out loud, because we all know Mom’s don’t have a lot of spare time). Mom’s Happy Place now has a Pinterest! Wahooooo!
